Just relax, that's what I often hear from my family.You need to relax, they say. Which I guess means I'm really booked up and busy and need to slow down a lot. I don't usually take much time for myself other than to work out on all, well, most days. But when I think of "relax," I need a swing seat, a book, and a jar of something tasty. Not being a drinker, I'm looking for ways to spice up the regular brew. This recipe is my idea of relaxation.

Fresh cucumbers and fresh mint leaves from my garden and some time in the fridge herald this flavorful drink.
I never buy sodas or drinks from a coffee shop simply because none of them are sugar free except for the coffee I order. I prefer to live without sugar and have been for 11 years. It's about being kind to myself and knowing that I'm better off without refined sugar in my life.

That's my plan today and for the next few days because we all work hard and sometimes this life isn't easy. We all deserve some time to “relax”.

Ingredients
- 2 Bags diced english cucumber with skin
- 1 Taxes fresh mint leaves
- 2 Bags Water
- 2 Bags fresh lemon juice
- 2 teaspoon Matcha Green Tea Powder
- 4 Bags Water
- 4 Bags crushed ice
- Your favorite sugar-free sweetener I used 2 teaspoons of Sweetleaf Lemon Lime Water Drops throughout the pitcher
- optional: Crushed Ice in jedem Glas lemon slices
instructions
Place the cucumber, mint, and 2 cups of water in a covered jar in the refrigerator for 2 to 24 hours.
Strain the mint and cucumber and pour the water into a large pitcher.
Pour the lemon juice into the pitcher.
In another bowl, mix the matcha powder with 4 cups of water and stir until well dissolved. Pour this into the pitcher and stir to combine.
Add ice and sweetener, taste and adjust to taste.
Store in the refrigerator until ready to serve.

This was too slimy for me no matter how much sweetener I added, and not enough mint. I think the problem is that I used lemon juice instead of freshly squeezed lemon (because it's significantly cheaper and easier) and the flavor is stronger. I usually use agave nectar as a matcha tea sweetener, but this time I had to use a ton of Splenda just to mask the flavor as well as I did. If you're making this with lemon juice instead of freshly squeezed lemons, I would reduce the recipe to 3/4 cup or even less. I wish there was a side note, although I still appreciate having a guide to work with!

I made and followed the recipe.
I wrote down the changes I would make.
It wasn't minty enough for me, so I'd add more and soak it separately from the pickles. He would then squeeze the mint leaves for maximum flavor.
I squeezed the cucs a bit at the end because they held a lot of water, I'm not sure if that matters but I definitely wouldn't squeeze them. I bought the Sweetleaf Lemon sweetener and still found it too acidic for me (2 cups of lemon juice...10 limes), so I added stevia.
This was very expensive. It cost me about $18.00 before sweeteners, which I didn't have. Recipe yields exactly one gallon. I am very satisfied with the result. I already drink, but I'm waiting for my personal changes. Thank you for putting this recipe together. I am estimating it at around $2.25 for 16 ounces. versus $2.50 for Starbucks. Despite being a price wash, it already has the sweeteners in it. If you remove the matcha tea powder, it reduces the cost by $5.00. Some things to keep in mind are sugar 70 calories, 14g. for 16 ounces or stevia, the convenience of a packet mix, or this recipe which, once you get your personal taste, I think will be a lot tastier than the Starbucks packet. I hope this information was helpful.

I really want to try this, but is there a matcha substitute that I can use? I can't drink green tea because it gives me A LOT of stomach upset.

You can skip it and use regular tea if green bothers you. It doesn't turn green, but it still tastes good.

You may have saved my sanity. CLRs are my favorite drink at Starbucks, but I'm on keto now, so I can't eat carbs/sugar. This gets perfect with some Torani Sugar Free Raspberry Syrup Pumps!

I did this over the weekend. I started by doubling the amount of cukes/mint/water to make a larger batch but ended up using only 1 1/2 cups of lemon juice (I grossly underestimated the number of lemons I would need for 2 cups! ). After letting the water steep for about 36 hours, I ended up with about 3 cups of mint pickle water. Since I couldn't get enough to double it, I simply added all of the infused water to 4 cups of matcha water, only about 3/4 cup of lemon juice (my personal preference, less acidic, 2 cups would have made plenty of lemon too for me) and used SF Torani Raspberry Syrup and a few dashes of liquid Stevia to match the taste I'm used to and it's liquid PERFECTION. The color is a little different, but who cares what it looks like?
